Swiss absinthe of superior quality
The absinthe made by Willy Bovet is distilled using a home made process and includes three different products:
Absinthe Septante7 77% vol.
Absinthe Nostalgie 54% vol.
Absinthe Le Chat 54% vol.
Absinthe Tradition 65% vol.
The absinthe of Willy Bovet is made up of 10 aromatic plants, all of which are medicinal plants. Plants such as the grand wormwood (Artemisia absinthium, called la grande absinthe in French), the roman wormwood (Artemisia pontica or la petite absinthe in French), and mint are all either directly grown by Willy Bovet or produced by local farmers.
After having been cleaned and dried in the traditional method, which consists of drying the plants in bundles in a well-ventilated place, the plants having been previously cut, are ready for maceration which precedes distillation. A still is obviously necessary for the distillation process. The one used by Willy Bovet was made by Roland Thonney, another colourful character of the Val-de-Travers.
